Last weekend I grabbed some food at a new Mediterranean restaurant. As one of their sides they offered a cucumber dill salad and it was so tasty! Out of the whole meal, that salad was what I was craving days later. It was mainly cucumber slices covered in a sweet dill dressing.This salad was very healthy, yet so delicious. I had to make it. Luckily I found a healthier version of the recipe on another blog, tried it, and loved it even more than the restaurant’s version.
This cold salad is so easy to make. It took me less than 10 minutes and I can see it being a great party dish. I really enjoyed the tang of the yogurt and the flavor the dill added to the whole salad. I found this recipe here.
Cucumber Dill Salad
4 tbsp plain greek yogurt
1 tbsp dill
1 tbsp rice vinegar
1/2 tsp sugar
1/2 tsp salt
1/4 tsp black pepper
1/4 tsp garlic powder
4 large cucumbers, peeled, halved, seeded, and sliced
In a large bowl, whisk together the yogurt, dill, vinegar, sugar, salt, black pepper, and garlic powder. Add cucumber slices and toss to coat. Refrigerate until it is time for serving.
