Mashed Cauliflower

Okay. I have been wanting to give these a try since I’m trying to eat a wider variety of fruits and veggies. Potatoes are so delicious. The Irish in me can’t resist them! However, they are so full of starchy carbs that will get converted into sugar in your body. So I went for the cauliflower version and served some of this up with some garlic and butter as a side to mahi mahi.

Josh really enjoyed these, but me, not so much. I could still tell it was cauliflower and it didn’t have the same texture as mashed potatoes. I can see how they are an awesome alternative. They are anti-inflammatory, full of fiber, vitamins, and minerals. If you can get use to the very slight difference between the two versions, cauliflower is the more beneficial and healthy way to go. And I have to admit this was SUPER easy to make. If you don’t have a food processor, use a blender.

Mashed Cauliflower

Cooking Time: 10 minutes


1 large head cauliflower, washed and cut into florets

1 tbsp minced garlic

2 tbsp butter, softened

salt and pepper to taste


Fill a large pot with 1-inch of water and place in a steamer tray. Add cauliflower florets to steamer tray and bring water to a boil on high heat. Steam until soft, about 10 minutes. Drain cauliflower.

Add steamed cauliflower, garlic, butter, salt and pepper to a large food processor. Blend until smooth. Add more salt and pepper if needed.
