Watermelon Margaritas

If you are anywhere in Southern California you know that this past month has been HOT. So hot that you either want to sit in the pool all day or have to take multiple showers throughout the day just to keep cool. Another way of keeping cool is by serving up some nice cold drinks. Ever since I tried a watermelon margarita at Outback Steakhouse, I’ve been wanting to create my own. They were so good. The idea of chilled watermelon served as a drink sounded so refreshing.

1/2 one mini seedless watermelon, chilled and cut into pieces

2 limes, juiced

1/4 cup margarita mix

1/2 cup silver tequila

1/4 cup cointreau

ice cubes

margarita salt

Slice one mini watermelon in half. Take the chilled half watermelon and cut into chunks. Place chunks into a blender along with the lime juice and margarita mix. Blend well.

Pour watermelon mixture through a mesh strainer to get rid of any white seeds. Return to blender. Add in the tequila and cointreau. Pulse several times to combine.

Serve in chilled margarita glasses with the margarita salt.

These margaritas had a very refreshing and strong watermelon taste. I was concerned that the margarita mix and cointreau would overpower but they worked out well.
