Coconut Pecan Cookies

These cookies I ended up baking the same night I made my apple squares. Again, I was trying to get rid of extra ingredients I had sitting around – coconut and pecan chips this time. I was in quite the baking mood. I found this recipe on AllRecipes as well. The page is right here. The recipe doesn’t require many ingredients. I added in the pecans knowing that it would only make them more delicious.

1 1/4 cups all-purpose flour

1/2 tsp baking soda

1/4 tsp salt

1/2 cup butter, softened

1/2 cup packed brown sugar

1/2 cup white sugar

1 egg

1/2 tsp vanilla extract

1 1/2 cups sweetened flaked coconut

1/2 cup pecan chips

Preheat oven to 350 degrees F. In a small bowl, combine flour, baking soda, and salt. Set aside.

In a large bowl, blend together butter, brown sugar, and white sugar until fluffy and smooth. Beat in egg and vanilla until combined. Gradually blend in flour mixture.

Mix in coconut and pecans. Drop dough in spoonfuls on an ungreased cookie sheet about 3-inch from each other. Bake for 8 to 10 minutes. Cool slightly before removing from cookie sheet.

These were very popular with my family and coworkers. I would love to make these again and add cocoa powder in an attempt to make some kind  of german chocolate cookies. I feel like I am becoming more creative with my recipes and I feel more confident changing the ingredients around. These cookies are great if you don’t want a really heavy cookie.
