Yes, we had another taco night at my house. While my mom cooked up the roast for the shredded beef tacos, it was my job to make the Spanish rice. This recipe came from a family friend who is very familiar with making Mexican dishes. Not only does my family enjoy this recipe every taco night, but my friends and boyfriend as well. It’s very easy to make.
1/2 onion, chopped
1 garlic clove, chopped
salt and pepper to taste
1/2 cup vegetable oil
2 1/2 cups white rice
4 cups chicken broth
1/2 can tomato sauce (8 oz.)
Add chopped onion and garlic to a heated skillet. Add salt and pepper to taste.
Stir in vegetable oil. After a minute of stirring around the vegetables in the oil, add your rice. Simmer until rice turns golden brown.
Make sure it gets nice and brown!
Next add in your chicken broth and tomato sauce. Stir and bring to a boil. Cover and simmer 15 to 20 minutes.
I am a huge fan of Mexican food and the fact that we can have authentic tasting rice to go along with our tacos and tostadas makes it even more delicious. Plus, the house smells like a Mexican restaurant! Enjoy! 🙂
