Deviled Eggs

A friend of mine came over to pass the time and we started looking through my cooking magazines to start planning out my next meal. We came across a recipe for deviled eggs which is really easy and doesn’t take a lot to make. She really wanted some deviled eggs so we ran to the store to stock up on eggs and got cooking (well..I did).

6 eggs

1/4 cup mayonnaise

1 tbsp minced fresh parsley

1 tsp sweet pickle juice

1 tsp Dijon mustard

1 tsp apple cider vinegar

1/4 tsp cayenne pepper

1/8 tsp dry mustard

salt and pepper to taste

To get your hard boiled eggs, simply place the 6 eggs in a pot and fill with enough water to just cover the eggs. Bring to a boil over high heat. Turn off heat, cover, and let the eggs sit for 12 minutes. Run cold water in the pot to cool the eggs. Peel and halve lengthwise. Scoop the yolks into a bowl and set the whites aside.

Mash together the yolks, mayonnaise, parsley, pickle juice, Dijon, vinegar, cayenne, and dry mustard until smooth. Season with salt and pepper. Spoon or pipe yolk mixture into egg white halves. Sprinkle paprika over tops. Chill and serve.

They turned out really well. I didn’t pay too much attention to piping the filling into the middle of the eggs because it was only being eaten among us. Otherwise I would have used a plastic bag to fill the eggs and make it look more neat.
